Mulitcoloured Roundup

Well today is the last day of the month - it will be May tomorrow. So many things happening in May, most of them exciting.

I thought I'd catch up with the remaining colours of the month before a new May challenge starts.

Cupcakes

On Friday I decided to baked MJ some Red Velvet cupcakes for our anniversary and they turned out great. Next time I won't make the cream cheese frosting as it was too runny and made them taste so sugary.

I wanted to share them with you all too.

May Gibbs Nutcote

On Saturday I took my mum and dad to Nutcote the home of May Gibbs. My mum has wanted to go there for years but never got round to it. I've been before many years ago with MJ but I knew the only way to get mum there was to pick a date and take her myself.

The weather was perfect, so sunny and not a cloud in the sky. The garden was lovely but I think next time we'll go in Spring when all the flowers will be out.

Mum had a great time and enjoyed wandering through the old house and learning the history behind the legend.

It was nice also to cross off another item from my 101 list (item 26).

A Love Story of sorts

Yesterday was my 5th wedding anniversary. So I thought I'd share with you a love story:

My love story starts back when I was 17 and on the 10th of August 2002 when I went to a youth group event in the city. I’d been having troubles with some of the girls there so I decided to talk to the new boy and see what he was like and thought maybe he could be my new friend at youth group. Little did I know that decision would change my life forever (plus too I did nearly miss the bus that was taking us in there).

MJ and I were good mates till January 23rd 2003 when he asked me very timidly would I go out with him as he liked me. I was so shy but said yes as I’d never had a boyfriend before and was a little nervous. The rest you could say is history. 

On July 9th 2007 I was surprised after work with roses and a car trip, not knowing where we were going till we got to Wentworth Falls in the Blue Mountains. I was taken to this gorgeous lookout of the waterfalls where MJ got down on one knee and very happily asked me to be his wife. I was so excited I couldn’t speak (which is very rare for me to be out of words). 

It was so much fun planning the wedding and on April 26th 2008 MJ and I were married at the age of 23 in front of family and friends (some people thought we should have been older – but we had been together 5 years by then). So now 5 years later we are still going strong and yes we have our fights (and boy can we have some good ones) and our moments (so does everyone) but we come through it together and still liking each other. 

I think our secret  to a good marriage is I married my best friend.

Golden Moment

Today in Australia is Anzac Day, where we remember those that have fought to keep our country great.

This morning I had a golden moment where I got to go to my first Dawn Service. I attended the local one near my house at 4:30am and was blown away by the attendance - over 300 people were all gathered to remember our soldiers past and present in the freezing cold. Amazing sight to see.

I've always wanted to attend a Dawn Service (item 47) but have never got around to it, I think I'll be doing this every year now.

Silver Lining

No matter how bad the day is, I believe there is always a silver lining, always something to be grateful for.

Today after a tiring day and tiring work week (I know it's only Wednesday but it was my last day for the week) I managed to somehow find a few silver linings in my day.

1. Coming home and sitting on the couch to watch Revenge from my Foxtel planner with no ads.

2. Lovely warm shower and then cozying up in my fluffy white dressing gown.

3. Nice cuddles from Mischa while watching telly.

4. Leftovers for dinner.

It can be hard to do some days when you feel just plain out of it but it's totally worth finding some silver lining in your day.

Lentil Burgers

Sunday night was the last night of my meatless dinner week challenge, so I went out with something fun - Lentil Burgers.

I've never had lentil burgers before and I was quite surprised at how yummy they were. While I was making them I was expecting them to taste quite crappy but I was wrong. I had mine with salad to cut out the wheat and MJ had his burger style with the buns and the lot, even he quite enjoyed them and went back for more.

This meatless challenge as taught me a few new recipes and also shown me there are some nice vegetarian dishes and not so nice ones too. I'll differently keep trying different vegetarian dishes but I'm still going to enjoy my meat when I do have it - best of both worlds.

Roasted Butternut Pumpkin Gluten-Free Pizza

Last night I made a homemade gluten-free Roasted Butternut Pumpkin Pizza.It was so yummy and the base was really crunchy.

I'm really enjoying this meatless dinner week. It's been great to try different things.

One more night to go and I've done my week. Yeah!!!! Celebrate on  Monday night with a Roast Chicken dinner.


Also I did make a nice dessert for afterwards. Stewed Mulberries with Vanilla Ice Cream - oh so good!

Fuchsia

Wednesday's colour was Fuchsia.

I searched the house for anything that's Fuchsia in colour and I found in my wardrobe this beautiful skirt my darling mum bought me years ago. She bought it for me cause she would love to wear it but it wasn't in her size so wanted to see someone in it. How sweet.

Wild Rice Salad with Feta and Toasted Pecans

Tuesday night was vegetarian dinner # 2 'Wild Rice Salad with Feta and Toasted Pecans'.

I was so happy, yeah finally a dinner I really liked. I was worried while I was cooking it and plating as it didn't look yummy but it was. The only thing I didn't like was the toasted pecans I found them a little too sweet as they were roasted with icing sugar (yes I know icing sugar). There was meant to be avocado in there too but the ones I had had gone off so I wasn't buying another one, so I just left it out, I don't think it really needed it anyway.

I'll differently make this one again but I won't add the icing sugar at all.

Spring Vegetable Stew

Last night marked the beginning of Meatless Dinner Week Challenge (which sadly has been narrowed down to only 4 nights this week instead of 6 nights due to other happenings in life) so I started the week off with a Spring Vegetable Stew.

It wasn't too bad really, it was just boiled vegetables with some vegetable stock, but it was ok. There was plenty of leftovers so that's got lunches covered for a few days.

At least the tastes are getting better and not worse. I have started to notice a difference being on this new blood type diet - I can't quite pin point how I feel different but I just seem too (which is an excellent thing). I will admit though I am looking forward to my roast chicken dinner at the end of this challenge (that's my new reward plus chicken is on my ok to eat list).

Family Picnic

Yesterday was a beautiful Sky Blue Sunday and we got to spend it as a family enjoying a nice picnic lunch.

The day ended up hotter then I expected and having worn jeans I started to overheat and had a little heat exhaustion by the end. But besides that a wonderful day was had by all and it was a ball playing on the awesome play equipment with my gorgeous nephew and niece.

We are planning on doing these more often together. Next time I think I'll also invite MJ's family along too.

Don Quixote

Last night I saw the ballet 'Don Quixote' at the Sydney Opera House. The dancing and costumes were superb. I love going to the ballet and seeing the amazing talent people have plus the outfits are stunning.

We had different seats this time, as we had to change our night due to a party last weekend. I was a little disappointed cause since it was a different angle we missed out on some of the dancing action on stage. After the first section I felt deflated as I couldn't see much on the stage but thankfully I could see more during the second and third section of the show (there were two 20 minute intervals). I'll be grateful for my normal seats next time.

The Australian Ballet is well worth going to see, just amazing talent.

Friday was my monthly card making class, they must have know I was doing the Month of Colour challenge cause it happen to fall on my yellow day and some of my cards did have yellow in them.

White - stands for innocence?

I've always heard that the colour white symbolises purity and innocence, properly why brides get married in white, most christenings gowns are white. All represent purity and innocence. 
 
Well I'm sorry to say but not everything that is white symbolises innocence sometimes things that are white can be anything but pure or innocence or sweet they can be sometime simply be a BRAT!!!!

Cautious the image below might look sweet enough but it comes with a warning - this thing will wake you up at 3am cause it's hungry or because it wants warmth under the blankets, it will cry when it does a poo just to let you know (cause you really wanted to know), it will cry cause it's bored, it will cry cause it's cold or hungry or just for no reason whatsoever but just to tick you off. I'll have to admit when it's nicely curled up like this in the sun your heart does melt.

Pumpkin and Tofu Laksa

Last night I gave myself ago a making a laksa - a vegetarian one too "Pumpkin and Tofu". Something I've never eaten let alone cook. The cooking process with quite fun but I wasn't really happy with the taste. I found the flavours quite strong and it was so filling I barely ate anything before I was too full. Plus I found the fresh coriander very sharp in my mouth. I was very disappointed as I was really looking forward to it and thought I'd enjoy it.

This vegetarian cooking isn't going so well so far. Let's hope next week my meatless dinner week challenge will go better and I'll have some food to enjoy. So far I'm hungry for a steak. Ha ha!!!!

I did find out a very interesting fact today that pumpkins are related to melons.

Princess Peach

I love Princess Peach. I always love to play her when I play Mario Kart. She has the funniest voice but she kicks some serious butt.

Leek and Ricotta Pie

Sunday night I cooked a Leek and Ricotta Pie out of my new Meatless Monday cookbook. Thankfully it didn't turn out black but nicely golden brown on top.

Not sure if I'll try this one again as it had a very onion taste after awhile - I know it was leeks but just got overpowering towards the end. It was one of those dishes where you go - yeah I like this but also go yeah I don't like this. Ha Ha! I did get to make my own pastry for it though - that was fun.
