Banana Berry Brownies
Put the kettle on and preheat your ovens to a 180 degrees Celsius, it's brownie time!!!
2 bananas (mashed)
2 eggs (beaten)
2 teaspoons coconut sugar
1 teaspoon maple syrup
1/2 teaspoon vanilla bean paste
Mix together on a low speed till combined
1/3 cup coconut flour
1/3 cup cacao powder
1 teaspoon baking powder
Add to wet ingredients and mix together on a low speed
Now add 60mls of soy milk to thin the mixture out (you can use any non-dairy milk here that you like)
Mix together at a low speed
Now fold in
1 tablespoon cacao nibs
1 tablespoon goji berries
1/2 a punnet of fresh mixed berries (I've used blueberries, blackberries, raspberries)
Now line a 20cm x 20cm square tin with baking paper and transfer the brownie mixture over and spread out evenly. Bake for 15 - 20 mins until cooked through.
Eat and enjoy!!!
Store in the fridge and it will last a few days.
